Greetings friends,

To begin I want to wish everyone abundant joy and vibrant health for this holiday season. All who are receiving this newsletter are very fortunate in many ways to have the choice of a healthier lifestyle. Others in the world are not so fortunate to have such resources at their fingertips as we do. With this I want to express my gratitude for this gift we have been given and only pray that all beings are blessed with peace in their hearts over the holidays.

Holiday Recipes from the Vital Creations Recipe Workbook – By Chad Sarno

Apple Fennel Salad with Lemon Zest

( Serves 4)

  • 2 c fennel julienne thin
  • 2 c apples julienne thin
  • T lemon zest
  • 2 T lemon juice
  • 2 ½ T olive oil
  • 1 ½ T thyme, fresh and minced
  • T red jalapeno seeded and minced
  • 1 t Celtic salt
  • Cracked black pepper
  • In medium mixing bowl toss all ingredients well.

    Serve chilled.

    A great variation can be omitting the apples and adding tangerine slices.

    Whipped Sweet Potatoes

    (Serves 4)

  • 1 ½  c sweet potatoes peeled and chopped
  • 1 ½  c cauliflower chopped
  • 1 c pine nuts
  • ¼ c leek chopped
  • 2 T onion powder
  • 3 T flax oil
  • ¼ c filtered water
  • ½ T Celtic salt
  • 2 T dried parsley
  • In food processor combine all ingredients and blend until smoothest consistency.

    Continue by pouring mixture in a high-speed blender and blend until completely smooth.

    Adjust salt.

    Apple Cobbler

    (Serves 4)

  • 4 apples, 3 sliced thin, 1 chopped
  • 1/2 c raisins soaked 2-4 hours
  • T cinnamon
  • 1 ½ T mesquite pod meal
  • 1/2 T lemon juice
  • t nutmeg
  • 1/2 t Celtic salt
  • 2 c pecans soaked 10-12 hours and dehydrated or just unsoaked
  • 1 c dates pitted
  • In high-speed blender, blend 1 chopped apple, soaked raisins, cinnamon, lemon juice, nutmeg and Celtic salt until smooth. Pour sauce over thinly sliced apples and toss well. Continue by spreading an even layer of apple mixture in a medium size lasagna pan, set aside.  Next, in a food processor pulse the pecans until finely ground then add the dates and continue to grind until evenly mixed. Crumble an even layer of pecan mixture over apples. Dehydrate whole pan at 110 degrees for 2-4 hours.

    Serve warm with Coconut Vanilla Crème.

    Also try other variations with peaches, or pears, omitting the apple.

    Feeding the Emotional Body from the Vital Creations recipe workbook by Chad Sarno

            Growing up in a society of rich and comforting foods it is very important, (while transitioning to a healthier diet), to focus on not only feeding ourselves physically but emotionally as well.  This is a key factor when it comes to keeping all levels of our being in balance. We have to face it; throughout our lives we have been very conditioned to eating foods that feed this emotional body.  For myself when I reflect upon my childhood and eating meals with my Italian grandmother many emotions arise.  The thought of warm escarole soup brings feelings of nurturance and security, while lasagna and fresh baguette, an overwhelming feeling of celebration and joy.   

    When the calling comes to step forward in choosing a healthier diet, many advocates do not emphasize this aspect when making this shift. When I transitioned to this lifestyle I ate strictly salads and fruit for the first couple weeks, which by far is the most ideal diet to follow after the transition period dissipates, after a while of experiencing the cleansing process my whole being began to transform.  My head began to feel clear, my body felt superhuman with an increase of flexibility and endurance during exercise, the amount of hours I was sleeping was decreasing and I truly just felt, as I never have before, alive! 

    During this amazing time of inspiration and transformation, there was this certain emptiness I had felt that was beginning to bring me on an emotional roller coaster.  This feeling was indescribable, so intense at times that I almost fell back on the cooked wagon. 

    I sat with this feeling for a few days asking for guidance from people around me and through my prayers.  The realization had come that I was focusing so much on cleansing my physical body, that I did not even consider the amount of emotional ties I had to food, which I just simply tossed aside and didn’t think anything of it, until these feelings of lack, and emptiness came over me.  Now not everyone has such strong emotional attachments to food and some can jump 100% to the raw foods lifestyle on salads and fruit with no problem, but for many of us it is very difficult without considering our conditioning of feeding the emotional body along the way.

    I began to attract people and teachers into my life that assisted me in seeing that, Yes! Even though I have engulfed myself in this optimum, lifestyle of raw and living foods does not mean I have to succumb to eat just carrot sticks and apples. I began to play with past cooked recipes I loved and began to covert them to suit my present diet.  Over a short period of time of creating dishes that my emotional body and mind were conditioned to enjoy, yet that were raw, the empty feelings had disappeared. 

    Now years later, I am able to sit back and laugh at what an emotional wreck I was for a while there, and it continues to amaze me how emotionally attached to food our society has assisted us in being.   More and more amazing raw Chefs and great raw restaurants are popping up everywhere offering the foods that we are so used to, to assist one in their transition to this lifestyle.

            In my book, Vital Creations, I have two priceless, informative charts on converting your favorite cooked, non-vegetarian recipes to 100% raw - vegan. You will find them being incredibly helpful on this amazing journey in feeding not only our physical, but also our emotional self. Transition should not be strenuous.  Balance is truly the key.
